a lot on the mind...

I have a lot of things on my mind. 
That right there very well defines an “understatement”. 
Everybody ought to think, reflect. It’s healthy and quite honestly,
I don’t believe people take enough time to “un-plug” and just think
You know, without music in the background or other noise - Just you and your thoughts. Most often those are the moments in which we discover ourselves and resolve to do excellent and daring things. It’s those alone moments when the little whisper makes you feel you can conquer even the world.

Sometimes though, it’s those moments that I hate. 
Thinking is good, when you know how to do it. I will admit - because I know I’m not alone in this - that I’ve had to seek help when it comes to my thought process. You know, weekly visits to a professional who helped me learn how to “think right”. Be happy.  Because quite honestly, more than I like to admit, when I’m alone with my thoughts it can be very self-destructive. To a dysfunctional level. A non-functional level. 

I love to read. Not only because it’s an escape from reality, but because it also gives perspective on reality. Ralph Waldo Emerson, my absolute favorite thinker, said: “There is an optical illusion about every person we meet.” To me, that is reality.  And like the words of my favorite church hymn, “who am I to judge another when I walk imperfectly? In the quiet heart is hidden sorrows that the eye can’t see.” What am I getting at? Not quite sure, but 1 – it makes not feel so crazy and like I’m the only one that doesn’t have my life figured out.  
 2 – don’t judge a book by its cover. Ever. 
And be nice because you don’t know what people are going through. 

 Side note: that is one thing that really gets my blood boiling: judgments. prejudice/racial/cultural/social/at-a-first-glance or whatever judgments without really knowing enough to do so. Where we all get the mentality that we have the right to rank people is beyond me. Yes, circumstances vary… but one person is no better or less than any other, nor do they deserve any better or less, nor are they capable of any less. And I’m not saying I’m not guilty of having judged someone, because I have. We all do it, all the time. In fact, I often kick myself for assuming things before I really knew the truth. But, the point is, we almost never know everything that lies behind the “optical illusion” of each person.

As I stated before, I don’t really know where I’m going with all of this.
I just have a lot on my mind.

Very closely linked to my way of thinking is the fact that I’m indecisive. Or more I have a fear of making decisions - A fear that I’m going to really screw things up and that the consequences of my decisions will affect many more people than just myself. The cause and effect aspect of decisions is a truth, but in my head, I have myself convinced that all I do is make mistakes. I know it’s wrong to think that way, but I can’t help it. My mom once told me that the only smart decision I’ve made in my life was to serve a mission. I’m sure she would take the statement back if she really knew how much those kinds of things stick with me. But i’ve grown up feeling like I have to be perfect and that I’m a disappointment – maybe that wasn’t the intent, but somehow it’s what’s engrained in my head. I do realize perfection is unrealistic and that comparing oneself to perfection is an automatic set-up for feeling like a failure. But as far as my decisions go, I feel that my life timetable was pre-planned…pre-plotted out about what I was to accomplish and how and by when …and somehow I’ve managed to ruin every aspect of that plan. Failure by design. I really don’t know what’s wrong with me. Well , I do – I too easily convince myself that I suck at life and retain that negativity in my head, letting it fester. 
So here I am at 24, still no college degree, not married, full of ideas and aspirations for the future – yet terribly afraid of making any decisions for fear it will be the wrong one. 
At least I’m aware of what my problem is.  

MORAL OF THE STORY – never compare yourself or your life to others. It’s true, we all are so different and will accomplish things at different times of our lives. I do believe everything happens for a reason and each mistake teaches us something and molds us into the person we become. I also know there ARE bad decisions and we CAN become “good for nothing” or “go nowhere” if we don’t learn from them. Remember - Our lives are on the Lord’s timetable. Not the world’s. I think this is why I loathe so much this society that judges people so quick…you know, for not fitting the “ideal mold” of what is “supposed” to happen in our lives and by what age. Before you know it, you become a topic of people’s gossip conversation. I hate gossip. Again, not saying I don’t ever participate in it – but I wish I didn’t. it’s horrible and destructive. I think most of gossip anyway is people trying to feel better about their own messed up lives at the cost of someone else’s.   

Side note: I respect my dad a lot, for I cannot think of one time that he has ever participated in gossip. Not saying he doesn’t hear it all the time, I mean, he’s married to my mother – but he just listens. Information is only shared when absolutely necessary. And he is probably the only person I can think of that literally will not tell anybody something if you ask him not to. I appreciate that.

I’m also very grateful for friends. Besties. You can think out-loud to a true friend – and they will tell you the truth even if it’s not sugar-coated. Because they truly care.
Now usually I’m a very private person. I don’t divulge many of my personal feelings, thoughts, or happenings for the above reasons. It’s no one’s business. But, right now, I’m letting a little out only because it helps me see things clearer and because I’m pretty sure I’m not the only one who feels any or all of this.   
  
Be true to yourself. 
Hearts do mend with time. There is never a lost or hopeless cause.

Don’t be a slave to the past. Mistakes are made. 
Learn to forgive – especially yourself – and move forward. 
Things have a tendency to right themselves.  
   
Faith is going forward, not knowing what is going to happen, but trusting. Just go for it.

I’ll be ok.

i had an early start today.
mamita and papi needed to be at the airport at the crack-o-dawn.
it got me to work extra-sunshiny early.
and..i'm in a great mood!
interesting.

work is going well.
i enjoy my new job.
i'm writing internet articles on all kinds of pest control.
you name it.
i'm learning...a ton!

i had a hair update.
always rejuvenating!

may is a great month.

1 - mother's day!
it was a lovely day - we grilled up the usual dinner for mamita:
steak and shrimp / grilled veggies
(DELiSH)

 i made angel food cake with fresh berries and real whipped cream
(none of that cool whip crap, no thankyou)
mmmmm!

2 - spring weather!
flowers, sun, a breeze, and my newly purchased hammock.
the scent of the honeysuckle make the location heavenly!

3 - may 13th marked my one year mark.

yes, i've been home from my mission a whole year.
definite time of reflection
nostalgia
gratitude
self-evaluation
.
boy, a lot can be accomplished - or not accomplished in a year.

puerto rico, i miss you.



(not to mention, some very dear people in my heart were baptized a year ago this may)

4 - my BiRTHDAY!
it's true.
i'll be 24.
it will probably feel a lot like turning 23.
(last year)
i swear that was just yesterday.
... i had only been home from my mish a week
and it was my birthday.
needless to say, it got lost amongst the weird feelings of being home again.

this year, all i've asked for
is kevin.
we're bringing him out in july.
i couldn't be more anxious for anything!
(yes, i realize he looks drunk in this picture)

i already have my list of all the things we have to do while he's here.
his first georgia experience!!!

other updates:
- i had my last day at work this last tuesday
- i start my new job tomorrow

- i've enjoyed the last few days off from work.
mom and i hiked stone mountain.
did some shopping.
i had time to try some new "summer recipes"
my favorites:


Fresh Tomato & Spinach Shrimp Pasta
(i didn't have shrimp, i used chicken...still amazing!)

Ingredients



8 ounces dry fettuccine pasta
3 cloves garlic
1/2 sweet onion, cut into wedges (i used red onion, it's all i had, but those are sweet, and delish)
3 tablespoons fresh oregano leaves
4 tablespoons olive oil
4 medium tomatoes, chopped (go for 5 - i like veggies)
3 tablespoons chopped fresh basil
salt and pepper to taste
1 cup spinach leaves (i used like 2 1/2 - love that spinach!)
1 pound cooked shrimp - peeled and deveined (or chicken - cut into small chunks and cooked)
8 ounces fresh mozzarella cheese, diced

Directions
1.Bring a large pot of lightly salted water to a boil. Add the pasta, and cook for 8 minutes, or until tender. Drain.

2.In the container of a food processor, combine the garlic, onion and oregano. Pulse until finely chopped. Heat the olive oil in a large skillet over medium heat. Add the onion mixture; cook and stir until fragrant and almost golden. Mix in the tomatoes, basil, salt and pepper. Simmer for about 5 minutes while the pasta is cooking, stirring occasionally.

3.Mix in spinach until it wilts, then just before the pasta is done, stir in the shrimp. Cook until heated through. Toss with pasta in a large serving bowl, and mix in mozzarella cheese.
 
it's good even the next day cold!
 
WATERMELON SUMMER SALAD
 
Ingredients



3/4 cup halved, thinly sliced red onion

1 tablespoon fresh lime juice

1 1/2 quarts seeded, cubed watermelon

3/4 cup crumbled feta cheese

1/2 cup pitted black olive halves

1 cup chopped fresh mint

2 tablespoons olive oil

Directions

1.Place the onion slices in a small bowl with the lime juice. The acid of the lime will mellow the flavor of the raw onion. Let stand for 10 minutes.

2.In a large bowl, combine the watermelon cubes, feta cheese, black olives, onions with the lime juice, and mint. Drizzle olive oil over it all, and toss to blend. Dig in and be prepared for a pleasant surprise!
 
seriously - the feta + watermelon combo is yummy!
the fresh mint is a must!
and maybe even add a lil extra lime juice.

more on change:
 i got a new job!
i have been blessed with my current job
and have quite enjoyed it.
but along came a new opportunity
and i took it!
i will start may 16th.
i will still be behind a desk, and on the phone some.
but, a pay raise. no weekends. and less hectic. 
i think right now i'm most excited about my paid vacation!
it works out perfectly for bringing kevin here this summer

first, i just ate completely fermented pineapple.
and more than i should have to.
i didn't MEAN to
and one would think i would have figured it out sooner.
i just thought the grapes they were in the container with made them taste funny.
HA
i figure mom would have noticed when she put it together this morning. 
(ok, yes, i'm almost 24 and my mother still packs food for me everyday
i'm sure it's more common than you think, right?!)

anyway...my stomach feels queeezy..blechk

this past saturday we put the garden in!

it was an all day family project.
i did the tomatoes, onions, and cucumbers (my least favorite)
FRESH GARDEN TOMATOES ARE MY SUMMER DELIGHT! a MUST HAVE!
we also have summer squash
zuchinni
red, yellow, and green bell peppers
jalapenos
poblano chili peppers
green beans
and for the first time this year we're trying:
sweet potatoes
strawberries
asparagus
and carrots (at my request because i want to pull them out of the ground!)

anyway. i'm excited  for
the "fruits of our labors"
:)


this past weekend i also had a breakdown.
my parents are troopers because MY frustration becomes THEIR frustration.
mom says i'm like a time bomb and they never know
until it builds up to much i burst into tears and let it all out.
the cause: kevin will no longer be able to make it in august.
so my new years resolution for a marriage in 2011 is out the window.
and so are all my plans i had.
my big question: WHAT NOW??

i'm doing much better since sunday.
kevin had his english test scheduled today.
though his mom has been in the hospital for the past 2 days,
i don't know if it all went through as planned.
he had to give her his blood for a transfusion.
BYU sent him a letter stating his application will be good for
 January of 2012 now.
they don't want him to have to rush all the visa/sponsor/housing/whatevers for august.
i won't be going to colombia for my birthday.
it's been decided that it would be better to put the money toward
bringing kevin out here for a visit.
especially since we have to wait for January now.
i want him to come in july.
his first U.S. of A. experience!!
and he could be here for the 4th!
i'm very very anxious for it.
i can cope much better when there's a plan and end goal.

anyway... HELLO SPRING!
overlooking the week's rain...the sun was beautiful today.
dad's "terracing" the veggie garden, it's looking great.
hauling all the bricks for it was a work out - for me at least. ha!
mom did something to her back last night and walks around extra slow and half hunched.
the gorgeous weather and bad back made her cry this morning because she can't go out
 and do all the work she had planned to in the yard.
that's her playground...gardening.
i felt bad, so i went out for her and removed the sticks and pine cones
from the rain/wind we've had
and raked the pine needles and leaves and re-groomed the pine islands.
the weather today was ideal indeed!
the dogwoods and azaleas are in full bloom. it's SPRING!
(notice all the pollen on the leaves from the pine trees...kinda ruins the picture...meh)


general conference saturday today!
it was a little bittersweet seeing as i've been with kevin the last 4 general conferences.
but saturday is always my favorite conference day.
and today fulfilled my expectations.

my second mission reunion was this weekend in utah.
i wish i could have gone. 
hopefully by next time both kevin and i can go together.

it seems for a while now there have been no updates in kevin getting here.
the complications have been endless.
his family has been dealing with really discouraging situations lately.
when it rains it pours.
and sometimes you feel like you have every force against you.
it gets emotionally exhausting.
i'm to the point where i'm tired of hearing about other people's engagements
so happy together and even married already.
while kevin and i still are waiting just to be together.
it's been 6 months now.
and i don't think other people understand what it's like.
i try to not be bitter or angry or jealous or hopeless.
it gets lonely though.
and frustrating.
you know the tv show The Office...
in the first seasons when Pam was engaged for 3 years with no wedding in sight.
sometimes i feel like that will be me.
i don't want to go out and do anything
because the only person i'd want to do things with isn't even in the country.
and if i do go out...i'm boring. i'm not myself.
so i'd rather stay home.
LAME. i know.

sorry, i talk about this a lot.
and no one wants to read about it probably.
but, this is my blog. this is how i feel.
and getting it out...helps me feel better.
self-pity-party now over.


i've gone red potato crazy this week.
bought a HUGE bag of them.
so i made some yummy potato salad.
then i wedged them and roasted them with olive oil, parmesean and rosemary (mmm)
now i'm trying to come up with other ideas.
suggestions?


i want to go to colombia for my birthday.

my job:
"Bynum and Sons Plumbing, authorized provider for Home Depot, this is Whitney, how may I help you?"

the first customer i spoke to today had a water heater installed the day before
and it was already leaking out the top.
out the top means it's defective and needs to be replaced. (usually)
ok, not a problem, i switched things around on the day's busy schedule
so that we could make it to her home today.
i told her the available appointment time would be between 3-6pm.
do you know what she told me?...
"3 to 6??? This is RIDICULOUS! I don't have HOT WATER! 3-6 is the SOONEST?!
I cannot SHOWER...I cannot do my DISHES!!! This is an E-MER-GEN-CY. Do you understand? I mean, COME ON."

wow. really?
people are SO ungrateful.
last i checked, hot water is not a requirement to shower or wash dishes.
water, yes. HOTwater, no.
i wanted to shut ALL her water off because of her attitude.

 i hear these things daily though.
people completely LIVID because we can't fit them in on the spot for
a garbage disposal replacement.
ohPLEASE.
i guess i can't comprehend why not having one is the end of the world,
we don't even HAVE a disposal in my house.
or one man who told me he'd been without hot water for a week,
and had no clean dishes to use because they are all stacked up and dirty
and cannot be washed until he gets hot water.
??? LAZY.
it's called detergent, a rag, water, and your hands...get to work buddy! 

people.

pathetic.

i understand that in this country people are used to living with more luxuries than most.
we are blessed.
but the whole I NEED IT NOW mentality...i cannot stand it.
instant gratification. too many people are diseased with it.
it's always BIGGER or BETTER and comparing...
we see something, we want it, we get it...who cares if you can afford it.
just swipe a card.
and then we don't appreciate what we have
because there's  ALWAYS something else better we desire.
people think they have to have EVERYTHING..and right at their fingertips.
life would be over if one couldn't make a call, text, google something on the spot, or have music, movies, tv and games to entertain them if get they stuck waiting somewhere.
HEAVEN FORBID
patience is a virtue few possess these days.
so is simplicity.
and moderation.

but i guess people think i'm the weird one.
i don't own a smartphone, honestly i'd rather keep my phone off most days.
i don't own my own laptop. or my own car.
and my ipod is first generation, people call it a dinosaur.
i don't even have cable. tv is not a priority to me.
though i do like this season of american idol :)
i will never pay top dollar for name brand anything...and i love thrift stores.
as a result...i'm pleased to have a growing savings account.

you know...maybe one day we'll have a flood or natural disaster like japan.
and then people will realize how unimportant all this stuff is.

i would like to think that with this economy, people would be a bit more wise.

anyway...i think i'm done with today's rant.
sorry.

updates:
I've started wearing flip flops again.
and all the blossoms and breeze make each day beautiful.
the pollen count is outrageous, but i don't have allergies, what a blessing!
love the weather.

mom is on her new medication and is feeling 100% great.
having to drive her around is a blessing because we spend more time together.
dacy finds out soon-ish if she's having a boy or girl :)
cinnamon's husband, paul, is getting used to his new job in afghanistan.
i believe he's been there 2 months now.

i still miss kevin more than ever.
i kind of always feel like i'm half missing. i think that's why i'm so hermit-ish.
but i'm a strong believer that everything has it's purpose and timing.
good things
are worth working and waiting for. 

my week's notes to self:
1. put yourself in other people's shoes
2. start conversations with strangers
3. gossip less. it's dirty.
4. be grateful. show it.
5. the most important history in the world is the history of the church.

HAPPY ST. PATRICK'S DAY!

at work i get Wednesday off if i work the weekend.
and i worked this last weekend
so... i enjoyed my free day yesterday!

with her new "illness" or whatever it is, mom is not allowed to drive
so i spent the day taking her out places she wanted to go.
i feel bad she doesn't have the option to leave the house anymore whenever she wants.
she LOVES half-off wednesdays at salvation army...
haha...if you know how to look, you can find GREAT deals on good stuff.
after our "thrifting" - we went out to lunch: chinese and sushi and MMMMM!

then mom had her appointment at the neurologist...
her CAT scans came back normal, but one test they did, did not
it showed abnormal activity in her brain which confirmed her "episodes"
as seizures.
they don't know what CAUSES seizures, just some electrical brain shock that happens.
the Dr. prescribed a medication for her to see if it helps.
she is to take that and report back in 10 days how it's going.
she is still not allowed to drive for 6 months...
(if in 6 months she has not had more seizures, she'll be allowed to drive)
that's the hardest part for her.
we're grateful nothing showed up worse.

later we stopped by wal-mart to pick up her meds.
and hit up a furniture place she wanted to browse.

i had myLAST final exam last night too.
HOOrah for being done with my classes for the semester!

kevin was supposed to take his english test yesterday.
the building's internet was down and they couldn't do it.
needless to say, kevin was VERY UPSET.
this is probably the 3rd time his test has been postponed...it's always SOMEthing.

he needs to take it by the end of march for his byu application.



spring is in the air...i feel like everyone is having babies.
